Well, my gut is telling me that America needs this diet because it does something no other diet does: It tackles the biggest problems people have with their belly – including the tummy pooch everyone complains about and the constant heartburn, chronic constipation, and frequent gas and bloating no one will admit to,” Liz Vaccariello with Kate Scarlata mentions in her book, 21-Day Tummy.

At three hundred and twenty pages, this over-sized hardbound book is targeted toward readers looking for ways to lose weight, especially inches around the stomach area. After an introduction, there are eight chapters, followed by a conclusion, recipe index, weekly shopping lists, notes, and index. Besides the colorful prepared meal photographs and charts, there are personal biographies of those who have successfully lost weight.

Vaccariello’s plan supposedly can help anyone to shed belly fat in three weeks by digesting foods that soothe and shrink the stomach by balancing gut flora and reduce inflammation. Her rules are to eat more magnesium-rich food and anti-inflammatory fats, while eating fewer carb-dense foods and FODMAPS.

Starting the first chapter about Americans having expanding waistlines, the author explains basic anatomy in regard to digestion. We need to avoid eating disasters that produce gas, bloating, heartburn, acid reflux, constipation, diarrhea, and irritable bowel syndrome.

By avoiding “belly bullies” such as refined carbs and grains, trans fats, saturated fats, omega-6 fats, milk, yogurt, high fructose corn syrup, wheat, beans, and artificial sugars to name a few, dieters will not only shed inches, they will feel healthier. “Belly buddies” promoted include high-fiber and antioxidant vegetables, balanced-fructose fruits, high-fiber grains, nuts, seeds, healthy fats, lean protein, Greek yogurt, coconut milk, ginger, turmeric, and maple syrup.

The diet is broken down into three phases: five days to flatten, nine days to soothe and shrink, and five days of balancing. The book contains each day’s meal plans that can be made ahead and mixed within the phases for variety. Recipes include a total of five breakfasts, four soups, ten main courses, ten one-dish mains, seven salads, eleven sides, and four desserts.

With a recommended exercise program and a dedication to twenty-one days of dieting, readers can use the helpful weekly food shopping lists at the back to the book to plan their meals. Like similar diets, the first few days are the hardest to adjust to a new, healthier way of eating. Vaccariello hones in on getting rid of digestive discomfort while losing pounds at the same time.
