That is exactly what The Digest Cookbook by Liz Vaccariello does, and she has lots of testimonies from happy people to prove it. I’ll explain.

For over 90 years, Reader’s Digest  has been famous for sorting through stacks and stacks of information to ferret out the best nuggets for their readers. One year ago, the editor-in-chief, Liz Vaccariello, began the daunting task of researching healthy diet and weight loss information. Can you imagine how many hours it would take (I’m thinking decades) to wade through all the garbage out there? The fads, the fakes, the scams, and the ploys to reel you in and then sell you expensive supplements—not to mention all those impossible-to-stay-on diets and diets that are ridiculously expensive. If you’ve ever looked at the giant shelf-full of diet books at Barnes & Noble, you know what I’m talking about. It’s confusing. Even among doctors in white lab coats and fitness gurus in Spandex, there is a lot of conflicting information. So having a neutral party—someone who has spent an entire career sorting through fact and fiction—go through all the articles, science, and latest breakthroughs, and then boil it down to one clear presentation is like a gift from heaven.

I love Chapter 3, “Create Your Own 21-Day Fat Release Plan,” because you can tailor the plan to suit your own needs, tastes, allergies, etc. Frankly, there are too many diet plans out there that put foods I’m allergic to on the “essential” list. And then the other half of the list are foods that make me gag. By contrast, with this plan, you get to set up your own list with foods you like and that fit your lifestyle. Even if you’re a working mom and cannot do all the gourmet cooking, you can succeed by choosing fast and easy menu items. 

Chapters 4-10 are chockfull of delicious recipes and full-color photographs. Everything from breakfast bread to soups to main dishes to desserts is here. There’s a Fast Release Shake you can whip up that has 16g protein--no expensive pre-made mixes that taste like chalk. There are sandwiches and wraps for bag lunches. There’s Chicken Piccata with Capers and Olives, Herb-Crusted Salmon, Jerk Steak, and North Carolina Barbecued Tenderloin, among other mouth-watering main dishes. It goes without saying that there are plenty of salads and vegetable dishes to pick from.

And don’t forget dessert. How about a Strawberry Cheesecake Mousse with only 134 calories! Or, Chocolate Chocolate-Chip Cookies? Or, Blueberry Apple Crisps? Yum!
